This recipe comes from my friend Janne. It is delicious, so easy to make and much healthier than regular toasted muesli because it has no added fat. It has no added dried fruit either, but you can add this or fresh fruit as you like each day. It is a staple in our household and every household I pass on the recipe to.
Makes 28 x ½ cup servings
Time to make: 50 minutes
1 kilogram wholegrain oats
½ cup sunflower seeds
½ cup pumpkin seeds
½ cup chopped almonds (in skins)
½ cup brown sugar
1 cup boiling water
1 teapsoon cinnamon or vanilla
1. Preheat oven to 150oC. Place oats, sunflower seeds, pumpkin seeds and almonds in a large roasting pan.Dissolve sugar in boiling water, add cinnamon and then pour over oats. Stir well to combine.
2. Bake for around 40 minutes or until crunchy; stir every 10 minutes. Turn off oven and leave there until it cools. Store in airtight container. Serve with fresh fruit and milk or yoghurt.
