Apricot curry chicken with quinoa

I am sorry that recipes and comments have been thin on the ground this year – am on extended leave at the moment in Europe and recipe development has not been easy.  I will be back on home turf early July so promise to be more diligent then.  In the meantime I hope you like this delicious take on a recipe I found while in London (by Charlie Trotter).

Apricot curry chicken with quinoa
Serves 4
Time to make: 30 minutes

Apricot sauce
1 teaspoon olive oil
1 small onion, finely chopped
1-2 teaspoons curry powder
1 cup dried apricots, chopped
1/4 cup white vinegar
1 1/2 cups chicken stock
2 teaspoons olive oil
1 1/2 cups white quinoa
3 cups chicken stock
1/2 cup orange juice
3/4 cup diced cucumber
1/2 red pepper, finely diced
1/4 cup dried apricots, finely diced
3 spring onions, finely sliced
freshly ground black pepper
500g skinless chicken breast, cut into 8 smaller pieces
1 tablespoon olive oil

Put it together
Make sauce
Heat oil in a small pan, add onion and cook over medium heat until soft.  Add curry powder and cook for a further minute.  Add apricots, vinegar and stock and simmer for around 10 minutes. Puree, adding more liquid if necessary to achieve a thick sauce consistency.
Prepare quinoa
Heat oil in a heavy bottomed saucepant, add quinoa and cook, stirring frequently for about 5 minutes or until it develops a nutty fragrance.  Add stock and simmer for around 15 minutes until the liquid has absorbed.  Cool slightly then add remaining ingredients.
Cook chicken
Heat oil in heavy bottomed pan and brown chicken on both sides.  Add half of the apricot sauce, cover and cook over low heat for around 10 minutes or until chicken is cooked through.  Serve on top of the quinoa topped with remaining sauce.
