Ginger and walnut stuffed pears
I love ginger and walnuts so anything using them is a hit with me. The slow cooking of the pears first ie before adding the stuffing, caramelises and intensifies the natural sugars making a deliciously sweet dessert with little added sugar. Good enough to serve for a special dinner!

Serves 8
Time to make  5 minutes plus  2 hours cooking time

Ingredients
4 firm pears
70g ground almonds
2 tablespoons chopped crystalline ginger
3 tablespoons chopped walnuts
2 tablespoons honey or maple syrup

Steps
1. Preheat oven to 150oC. Chop pears in half and remove core – leave skin on.  Place pears cut side down in a non-stick baking dish.  Cook for 1 1/2 hours then remove from oven and turn over so the core side is up.
2. Mix remaining ingredients together in a bowl then divide between the 8 pear halves, pressing down into the core space.  Return to oven and cook for another 1/2 hour.  Serve hot or cold with Greek yoghurt.
