This pancake is so easy to make for one person and has great sustaining powers. The egg together with the fibre from the oats and oatbran will keep you going for 4 hours at least. Topped with fruit and yoghurt it is so delicious it will have you leaping out of bed in the morning!
Time to make 5 minutes
2 tablespoons rolled oats
2 tablespoons oat bran
2 tablespoons plain low fat yoghurt
1. Mix all ingredients together in a bowl. Pour into heated non-stick pan. Cook until bubbles appear on the surface then turn over carefully. Cook the other side for around one minute then transfer to a plate.
2. Top with fresh fruit and yoghurt. Get your daily fix of selenium by sprinkling with 2 chopped brazil nuts before serving.
